Deviled sausages (B)

Ingredients

Preparation

  1. Start by browning 6 good quality sausages off over medium heat in a large saucepan. Once you have a good colour on the sausages, remove from the pan and set aside.
  2. Add 1 tbsp. olive oil to the pan and once it comes up to temperature, add 1 onion, thinly sliced, and sauté for 3 minutes.
  3. Next, add
    • 4 cloves of garlic, finely diced
    • 1 green apple, finely sliced
    • 1 small bunch of thyme, finely cut
    • and cook for a further 3-4 minutes.
  4. Now add 2 tbsp of flour and stir well, cook the flour out for 3-4 minutes.
  5. Add 1 tin cherry tomatoes and 500 ml stock and over high heat and mix until the flour has dissolved.
  6. Mix in
    • 1 tbsp soy sauce
    • 1 tbsp Worcestershire sauce
    • 1 tbsp English mustard
    • 1 tsp black pepper
    • 1 tsp smoked paprika
    • 1 tsp chilli flakes
    • then add the sausages back to the pan.
  7. Simmer for 10 minutes or until the sausages are cooked through.
  8. Garnish with chopped parsley and serve with mash.
