Deviled sausages (A)
Ingredients
- 6 good quality sausages (pork, beef, lamb, vegan - use what you fancy)
- 1 tbsp olive oil
- 1 green apple, sliced thin
- 1 brown onion, sliced thin
- 4 cloves garlic, diced fine
- Small bunch thyme, cut fine
- 2 tbsp flour
- 1 tin cherry tomatoes
- 500ml chicken stock
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp English mustard
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp chilli flakes
- Salt to taste (you should not need much)
- Mash to serve
- Parsley to garnish
Preparation
- Start by browning your sausages off over medium heat in a large saucepan. Once you have a
good
colour on the sausages, remove from the pan and set aside.
- Add the olive oil to the pan and once it comes up to temperature, add the onions and sauté
for 3
minutes.
- Next, add the garlic, apple and thyme and cook for a further 3-4 minutes.
- Now add the flour and stir well, cook the flour out for 3-4 minutes.
- Add the tin tomatoes and stock and over high heat and mix until the flour has dissolved.
- Mix in the soy, Worcestershire, mustard and spices then add the sausages back to the pan.
- Simmer for 10 minutes or until the sausages are cooked through.
- Garnish with chopped parsley and serve with mash.
